CHILLI, COCOA AND A NEW WAY TO COOK

Big flavour.
Taco night sorted.

Mexicana pairs chilli and cocoa in a savoury spice blend inspired by mole poblano. Watch Adriano use it on beef cheeks, then bring the cooked meat to the table in tacos.

Why cocoa? Cocoa is part of the seasoning alongside chilli, herbs and spices. Together they give Mexicana its distinctive savoury profile.

From rub to filling Season meat before cooking, or mix into mince, chilli con carne and barbecue sauces. The blend already contains salt and sugar.

BEEF CHEEK TACOS WITH ADRIANO

The cut. The rub.
The cook.

Follow Adriano's beef cheek tacos video. These are the main stages, from the first coat of Mexicana to assembling the tacos.

  1. Season the cheeks. Coat the prepared beef cheeks with Mexicana, as Adriano demonstrates. The fine blend covers the meat with chilli, cocoa and spices.
  2. Cook until tender. Follow the cooking sequence in the video, giving the beef cheeks time to soften before pulling the meat for the filling.
  3. Build your tacos. Bring the cooked beef to your tortillas with the accompaniments shown in the video. Serve and let everyone build their own.

ANOTHER WAY TO USE YOUR JAR

Put chilli con carne on the menu.

Mexicana works in a saucepan too. Our chilli recipe uses one tablespoon of the rub with 500 g beef mince, vegetables, tomatoes and black beans.

Brown the mince, soften the vegetables, then stir in Mexicana before adding the tomatoes and water. Simmer, add the beans and cook until the sauce thickens.

Serve with rice, corn chips or guacamole.

Australian labelling lets herbs and spices be declared as a group when each is under 5% of the product, so a named spice can be in the jar without being listed on its own.
