Home Style Mojo Chicken is a bold, citrus infused braised chicken recipe packed with garlic, fresh herbs and savoury depth. This comforting one pot chicken dish uses tender chicken legs marinated in lemon juice, garlic and mojo seasoning, then slowly simmered with vegetables and stock until perfectly tender. The result is juicy, flavourful chicken with a rich herb and citrus sauce that pairs beautifully with roast potatoes or rice.
INGREDIENTS
- 8 lovely legs
- 2 tsp of mojo
- 1 lemon juice
- 4 garlic clove mince
- 1 brown onion diced
- 1 tbs thyme
- 1 bunch coriander chopped leaves and root
- 1/2 red capsicum diced
- 2 tomato diced
- 1 carrot diced
- 2 tbs olive oil
- 1 cup chicken stock
- 1 tsp salt

METHOD
- Marinate the chicken legs with mojo seasoning, lemon juice and minced garlic. Cover and refrigerate for at least 2 hours or overnight to allow the flavours to penetrate deeply.
- Heat olive oil in a large heavy based pan over medium high heat. Sear the chicken in small batches until golden brown on both sides. Remove from the pan and set aside.
- Reduce heat to medium. Add diced onion, carrot, coriander roots and capsicum to the pan. Sauté for approximately 4 minutes until softened. Stir in diced tomatoes and thyme and cook briefly to release their aroma.
- Return the chicken to the pan. Pour in the chicken stock. Cover and cook over low heat for about 40 minutes, or until the chicken is tender and fully cooked through.
- Finish with fresh coriander leaves before serving.
- Serve hot with roast potatoes or steamed rice to soak up the rich garlic lemon sauce.
